YHA Metro has a great peep hole in a shower but I checked out without staying the night as it’s a bit far from the city for my liking

Honestly, I wouldn't count on that. I've stayed in many hostels with both mixed and female only room and there's always at least one lady in the mixed one. Though, nowadays, it's not easy to also find male only dorms in hostels...

In NYC the west side YMCA is your best bet because it will give you sauna/steam access in their gym.
Yes, shower in your underwear. You never know when someone might have a camera.
